Something you might want to consider is running a Virtual Machine on
the Windows box (VirtualBox is free and pretty good). You can install
and run Linux in the VM, it will get a single virtual monitor, and you
can maximize this on a single Windows monitor.

From the VM you can connect to your OVMS server and run the app in the
VM. You'll only have the real estate of the single monitor, but it
won't be as confusing or weird.
