I also noticed in your log file:
(EE) intel(0): Output VGA enabled but has no modes
(II) intel(0): Output LVDS using initial mode 1024x768
It seems the server cannot figure out your display with the information
given.
If you know the range of h & v sync values, maybe that will also help it.
I have no experience at all running a projector from Linux.
Mine is connected to my X-box : )
