basically:
xrandr --addmode <output> <mode>
xrandr --output <output> --mode <mode>

the name of the output and mode will depend on your card and monitors e.g.,
xrandr --addmode VGA-0 1024x768
xrandr --output VGA-0 --mode 1024x768
