[RFC] Release schedule for X server 21.1

Hello,
There have been a couple of relatively significant bug fixes submitted
over the weekend which we should take into xserver 21.1 branch. As a
result I think it makes sense to defer the release of RC 1 by one week,
to 2021-09-06.
