No, "grab" here corresponds to a very specific technique in the X
protocol. Probably closer translations are "capturer", "verrouiller", or
"bloquer". I'd translate as:
Applique les modifications sans verrouiller l'accès à l'écran. Ceci
évite de bloquer les autres applications pendant la mise à jour, mais
peut empêcher certaines applications qui détectent les changements de
taille d'écran de recevoir les dernières valeurs.

That's because cloned outputs share the same crtc. When you clone an
output, you actually just change the crtc driving it, therefore using a
different gamma. I realise the whole man page doesn't explain what is
"cloned output". So we could try to fix this at least in the
translation with:

Défini les valeurs, spécifiées en virgule flottante, comme correction
gamma pour le CRTC actuellement branché à cette sortie. Remarquez que
pour des sorties clonées (c-à-d qui partagent le même CRTC) les valeurs
seront identiques, et que le changement d'une sortie vers un autre CRTC
ne modifie pas la correction gamma du CRTC.
